Join us at Mano a Mano for another unforgettable Nose to Tail pig dinner celebrating the entire animal from Slagel Family Farm. This is a tribute to craft, respect, and the timeless practice of honoring every part of the harvest—transforming prime cuts and lesser-known treasures alike into something extraordinary. Slagel Family Farm has long been our partner in bringing ethically raised, pasture-fed pork to the table, and this dinner is our way of showcasing their dedication from start to finish. Expect bold flavors, thoughtful preparation, and a menu that tells the complete story of the animal, the farm, and the land. It's a celebration of sustainability, skill, and the kind of eating that connects us to where our food truly comes from.

First Course - Pig Salumi

House-cured prosciutto and capocollo, artisan cheeses, porchetta, and Rosetta bread.

Second Course - Crispy Pig Salad

Crispy pork feet ,potatoes, green beans, red onions, and roasted Merlos peppers, dressed with a light vinaigrette.

Third Course:

Pig Ravioli

 Tender pork shank ravioli with brown butter, sage, and 30-month-aged Parmigiano Reggiano.

Pig Pappardelle

Fresh pappardelle with slow-braised pork, San Marzano tomato sauce, and Pecorino Romano.

Main Course - Pig Cotoletta

Milanese- grilled, finished in the oven with anchovy butter, breaded pork chop served with seasonal peppers.

Dolce - Popcorn Gelato

House-made popcorn gelato with a sweet and salty finish.
